Chef Thierry, born and raised in Brittany, France, trained at a famous local restaurant “Le Jardin de la Tulip.”
From July 2009, he travelled to Indonesia and developed his career at a five-star hotel “Mandarin Oriental Jakarta”, which helped him to better understand of oriental food.
As an executive chef, he took charge of the banqueting events at the brasserie-styled Lyon French restaurant, and Xin Hwa Chinese Restaurant.
His grandmother was a cook and his father was a fisherman. He learned the sense of ingredients from his grandmother and learned to choose fresh ingredients from his father. His restaurant has developed and showcased menus that use seasonal ingredients specially crafted in Europe.
