Chef Shin Chang-ho's food contains Korean philosophy. It uses grains and livestock products that contain the energy of the land and sea to capture Korean emotions. This goes the same with how he treats the Korean ‘jang’ and vinegar as well. The perilla oil grown in the mother-in-law's garden in Jinju, Gyeongsangnam-do, and 30 kinds of vinegar made with the special fermentation technique of ‘Joo Ok’ heighten the level of perfection of the foods.

 

Led by Chef Shin Chang-ho, ‘Joo Ok’ presents a "New Korean Dining" based on seasonal ingredients from all parts of the country. As the meaning of the restaurant’s name, "like a gem," ‘Joo Ok’ treats their guests in a precious manner, and the ingredients are carefully treated and presented on the table. 

 

‘Joo Ok’ does not spare the cost of getting quality ingredients since they know the importance of the ingredients. Every month, menus made of seasonal ingredients are served. Because the food is changed according to the seasonal cycle, the course composition can also be found to be different, thus giving joy to the people savouring it.
