“The First Korean and Female Chef de Cuisine”

 

 

Most Michelin chefs say they are inspired by their mother’s cooking. However, less than four percent of the world’s three Michelin star restaurants are run by women. In the conservative world of chefs, Chef Choi Hae-young, who leads the Michelin 1 star restaurant “STAY”, is special. Choi Hae-young was a disciple of Yannick Alléno and became the first Korean chef in the French Yannick Alléno group. She is the first Korean chef to serve as chef de Cuisine at Stay, a Michelin star restaurant located on the 81st floor of Hotel Signiel Seoul.

 

Chef Choi Hae-young, who started her career in pastry, found her turning point in her cooking career while studying in France. Based on French cuisine, she added the touch of Korean cuisine to create her own unique culinary world. Grilled ducks cooked with sugar crusts made of orange peel show the essence of her cuisine.
