Korea's Culinary Zeitgeist

Chef Kang Min-goo, one of the most talked about chefs in Korea is still in his early 30’s, but has already built an impressive résumé outside of Korea. His restaurant Mingles located in Seoul, has been serving up modern Korean cuisine, fusing traditional Korean dishes and European influences. Mingles has been named as one of Asia’s 50 Best restaurants this year, entering the list at No.15. 
 
Kang was trained under Martin Berasategui in San Sebastian, Spain before going to ply his craft at Nobu in Miami and the Bahamas. After becoming the youngest head chef at Nobu Bahamas, Kang returned to Korea. His sense of duty to bring his international experiences to the table is reflected in his cuisine. 
 
At Mingles, a seasonal menu plays with “jang” and “cho” – Korean fermented sauce and vinegar – and divides dishes into sections like grains, vegetables and fish.
Traditional Korean dishes are given unexpected Western touches such as foie gras and truffle, surprising local palates and reinventing old classics.
The name Mingles doesn’t just reference the chef’s name, it also signifies a “harmonious mix of different things.” This is a space where this young chef’s dreams, experiences and philosophy all come together. And in this atmosphere, you will be served a tasty meal no matter where you came from.
